El Salvador Carlos Pola | Finca Las Brisas
Introducing our first direct trade relationship coffee!
We were enamored by this specific lot due to the sweet lemonade-like acidity and big rounded body.
A member of the Pablo’s team sourced this coffee from a specialty coffee producer in El Salvador that he personally connected with while working at origin. We’ve now shared in this relationship by importing the first US lots from Carlos Pola of Juayua, El Salvador.
About the Coffee
Carlos Pola is redefining the flavor potential of experimental hybrid varieties, by way of innovations and organic practices. His permaculture system promotes symbiosis and soil quality while fighting pesticide use and eliminating erosion. Charlie could be characterized as “one with the soil”. We couldn’t be more happy to begin a long-term relationship with Carlos.
This harvest we chose to feature a variety he calls “Limonares”. The coffee cherries were meticulously picked at peak ripeness. Next, the outer fruit and much of the mucilage was removed before the coffee was placed on raised drying beds for 2 weeks, known as a “yellow honey” process. This contributes to a clean and focused flavor profile.
